One of the aspects more fascinating of the nutrition is that it relies on an extensive variety of disciplines ranging from the molecular field to the social sphere, from the biochemical or the genetic to the psychology, the anthropology or the economy. In spite of his solid scientific base, those that devote us to investigate and teach on the nutrients, foods or optimum alimentary patterns to achieve and keep an ideal health, we observe how changing the “styles” are as results about nutritional studies are being published. This has given place to a big confusion in the councils or messages that nowadays spread too easily throughout the media.

In order to try to stop this confusion, we all now agree on the need of basing us on solid scientific evidence before giving councils or propose new nutritional patterns. One of the most appropriate ways to obtain this evidence is to measure the magnitude of the effect that has the food or nutrients intake on the biological processes in the body and, especially, those that are altered during the beginning and progression of chronic illnesses.

Using the examples of some current dietary advices and relying on the new knowledge about molecular mechanisms now available, we will analyze some “myths of the nutrition” and how we can apply the biomarkers to elucidate the true impact that is causes on our eating habits.

Considering the big complexity of the nutritional processes and the enormous path that still remains us to complete our knowledge in this field,  we will end up admitting the danger of trying to reduce all these processes and interactions to only a few biomarkers.
